**Occasion:** Two Birthdays. Emily: 18. Trenstin. 5
**Amount:** One dozen each
**Cake(s):** Emily: Banana cupcake with caramel whipped cream filling, marshmallow buttercream frosting with caramel swirls.
Trenstin: Chocolate chip cupcakes with milk chocolate frosting and chocolate chip cookie atop.
Oreo Cake with Milk Chocolate Frosting.

Had two birthdays on the same day and decided to get all of my baking done at once. Banana was not yet a flavor I had tried but was interested when I read about it in a cupcake baking book. I figured that I like banana bread so cupcakes should be similar in being yummy. Luckily my predictions were right and the cupcakes ended up with a light and fluffy flavor, much less dense than normal banana bread. I thought about pairing the cupcake with a milk chocolate frosting but then thought that it might have been too heavy for the light cupcake. I should have just gone with the chocolate because the marshmallow buttercream ended up being a little too heavy anyway. Next time I will definitely try the chocolate on top.

Amount: 8 Dozen.
Cake(s): Red Velvet with Creamed Cheese Frosting
Oreo Cake with Milk Chocolate Frosting.
Toppings: Multi-Colored dinosaur sprinkles and Dino Rings.

One of the babies that we sit during the day was having a huge first birthday party and I was asked to make a few dozen cupcakes to help celebrate. The theme of the party was dinosaurs, and there were dinosaurs everywhere. I took full advantage of this by baking the cakes in bright orange wrappers adorned with green dinos, and even used dinosaur sprinkles and topped the cakes with dinosaur rings that I had purchased. What can I say, I like to keep in theme.

My plan was to grab two different recipes and double them up and see how many I ended up with, and that would be that. Apparently the Red Velvet recipe was large to begin with, because doubling it gave me five dozen. The Oreo recipe was smaller, only giving me three dozen. I think that the Creamed Cheese frosting is the whole reason that I'm insanely in love with the Red Velvet cupcake, to me the frosting is what makes it ridiculously awesome.
